Sono questi gli ingredienti che hanno caratterizzato l\u2019edizione inaugurale del Concorso di cucina della rete ENAIP \u201cLe Regioni a tavola tra tradizione e innovazione\u201d, ideato e promosso da ENAIP Nazionale e ospitato nella cittadina piemontese di Acqui Terme (AL) il 7 e l\u20198 maggio 2026, con il patrocinio del comune di Acqui.<\/p><p>In gara <b>40 allievi e allieve dei terzi e quarti anni<\/b> dei corsi di Istruzione e Formazione Professionale, \u201c<i><b>Operatore della Ristorazione: preparazione pasti e allestimento piatti<\/b><\/i>\u201d e \u201c<b><i>Operatore della Ristorazione: allestimento sala e somministrazione piatti e bevande<\/i><\/b>\u201d.<\/p><p style=\"text-align: justify;\"><span style=\"color: black; mso-themecolor: text1;\">Otto i Centri di formazione professionale della rete ENAIP in gara, provenienti da diverse regioni: il Piemonte rappresentato dal <b>cfp alberghiero di Acqui Terme<\/b>, la Lombardia con le allieve e gli allievi della <b>sede Enaip di Como<\/b>, l\u2019Emilia-Romagna <b>con i cfp di di Parma e Fondazione Enaip di Reggio Emilia<\/b>, il Veneto rappresentato dalla <b>sede di Padova<\/b>, il Trentino con <b>il centro formativo di Tesero<\/b>, le Marche con il <b>cfp di Pesaro-Urbino<\/b> e, fuori concorso, perch\u00e9 al momento della candidatura alla gara non aveva allievi di terzi anni, la Puglia rappresentata da <b>Enaip IS Foggia<\/b>.<\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-1c833b4 e-flex e-con-boxed e-con e-parent\" data-id=\"1c833b4\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t\t\t<div class=\"elementor-element elementor-element-82a91f3 elementor-widget elementor-widget-heading\" data-id=\"82a91f3\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h4 class=\"elementor-heading-title elementor-size-default\">Giovedi 7 maggio 2026 - Dopo l\u2019accoglienza degli ospiti e della giuria tecnica, i concorrenti delle brigate di cucina e di sala\/bar si sono recati nelle rispettive postazioni e hanno dato avvio alla sfida: preparazione dei piatti, mise en place, realizzazione dei centro tavola e preparazione dei cocktail e dei relativi abbinamenti con finger food e drink dopo Bonda<\/strong> (Presidente Discepoli Escoffier Piemonte e Valle d\u2019Aosta), <strong>Beppe Sardi<\/strong> (delegato nazionale Discepoli Escoffier Italia), <strong>Domenica Tomasi<\/strong> (Gran Maestra di Cucina), <strong>Alessio Lo Sardo<\/strong> (AIS), <strong>Marco Cavallotto<\/strong> (FISAR) e <strong>Luciano Servetti<\/strong> (ma\u00eetre internazionale), ha giudicato i nostri allievi e le nostre allieve di \u201c<em>livello altissimo, oltre le aspettative<\/em>\u201d la preparazione tecnica e la capacit\u00e0 di reinterpretare il patrimonio gastronomico regionale in chiave le relative motivazioni ad <strong>Irene Bertucci<\/strong> (responsabile dell\u2019iniziativa) che ha dato il via alla premiazione. Gli allievi e le allieve lombarde hanno proposto un raviolo trasparente allo zafferano ripieno di ossobuco e spuma di midollo chiarificato su fondo di carne e katzuobushi e in abbinamento un Rosso di Valtellina (Casa Vitivinicola La Spia). Per dessert crumble croccante allo zafferano, cremoso all\u2019arancia e Campari, burro montato con lo zafferano, caviale all\u2019arancia e una gelatina al Campari e in abbinamento Brachetto d\u2019Acqui Docg Cocchi. Abbiamo ascoltato gli interventi di <strong>Emiliano Manfredonia<\/strong> (Presidente Nazionale Acli), <strong>Mimmo D\u2019Alessio<\/strong> (Vicepresidente vicario dell\u2019Accademia Italiana di Cucina),<strong> Luca Cont<\/strong>i (Presidente ENAIP Nazionale), <strong>Luca Sogno<\/strong> (Presidente Enaip Piemonte), <strong>Paola Vacchina<\/strong> (AD ENAIP Nazionale) e <strong>Matteo Faggioni<\/strong> (Responsabile Produzione Enaip Piemonte).<br \/>Non da ultimo siamo stati onorati della presenza del <b>sindaco di Acqui Terme Danilo Rapetti Sardo
